I want to create a website which only sells digital invites and the only item to update will be the text fields. Mainly from mobile, so I definately want the users to enter the text in a text box and see it appear on the design, rather than using the user interface o nthe design itself, as I find that a bit overwhelming.

You can use shortcodes to place the text fields outside of the canvas. You can create them going to products -> shortcodes. Afterwards you just enter those in your WooCommerce product page.

I liked the ability of auto updating the text fields on the design, from the text box fields next to it: https://fancyproductdesigner.com/product/businesscard/
I purchased both FPD and the Plus plugin.

Please advise how I can get similar functionality setup as per: https://fancyproductdesigner.com/product/businesscard/. Do not need to change any colours for now. Only the text fields.
