Many of us need to just add text but we don't want the user to be able to change font, font-size, bold, italic... so what I suggest is to disable the advanced text editing box when you click over a text field, so the user just can edit text with a predefined style.

In the UI Composer page you can exclude some tools from the toolbar. If you need to hide more, you can only do that via CSS.
