Hi there - I'm looking at Fancy Product Designer but am wondering if it can do what I'm looking for:
Have customers select one of 6 items, choose a font (I have 6 fonts I'd like to offer so a plugin that lets me limit to my 6 fonts), choose vinyl color, and icon. So basically the plug in would need drop down options that I have pre-determined. I don't want customers to be able to upload their own designs.

In this case I'd go for a WooCommerce in combination with FPD. It has all the capabilities you describe here.
