Is there a way to have text reset when a user clicks to edit? For example if I have the a text box that says "add text" I would like for that text to disappear when a user clicks to edit it, so that the user does not have to erase "add text" and can simply start typing.

That is at the moment not possible. You could add a feature request for this via the feature request forum.
