Your plugin it´s amazing, but I would like something a little
more limited for the customers use. Where they can only add 1 or 2
lines of text and 1 image, and NOT be able to move or resize the
content. Is that possible? Here is a link of example of how I

You can simply disable all the functions you do not want via the UI & Layout composer. Then add two editable text fields for the customers.
